... and then someone will come along and tell us it's all a scam by the supplement industry just to get people to buy more processed powder.

From an anecdotal stand point, that 0.8g ~ 1g / lb of target bodyweight has been the "go to number" for quite a while now, and a lot of people have benefited from this rule of thumb when doing a re-composition. This is a prime example of theory catching up with practice.
